Caldo (Chicken Soup)

Vic & Marlene's recipe for a delicious New Mexico style chicken soup. 

Ingredients

SOUP INGREDIENTS
Chicken
Long Grain Rice
Chopped Jalapenos or Anaheim Chilis
Cheddar Cheese - shredded
Italian Dressing mix (Optional)
Avocados - diced

Lime Wedges

 

BROTH INGREDIENTS
Chicken Broth
2 bay leaves
thyme
parsley
peppercorns
salt
"Good Seasons" Italian salad dressing optional

2 stalks of celery

1 onion
carrots

 

Preparation

  1. Cook chicken until tender in well-seasoned broth: I season with 2 bay leaves, thyme, parsley, pepppercorns and salt. You may add a package of "Good Seasons" Italian salad dressing if you would like. It improves the flavor. Also 2 stalks of celery, 1 onion and carrots (optional)

  2. Shred chicken and set aside
  3. Strain broth
  4. Serve in bowls of rice, shredded chicken and carrots and broth
  5. Garnish with chilies, cheddar cheese, avocados and lime juice.
